PINTO BEANS
Luby's Cafeteria Copycat Recipe

Serves 12

2 cups dried pinto beans, picked over and washed
1/2 gallon water
1/2 teaspoon granulated sugar
1/2 teaspoon garlic powder
1 teaspoon chili powder
1/4 teaspoon black pepper
1/2 cup diced tomatoes, 1/3 inch cubes
1/4 cup cilantro sprigs, no stems
1/2 cup diced white onion, 1/3 inch cubes

Place all ingredients except tomato, cilantro, and onion in heavy pot and simmer for 1 1/2 to 2 hours. Stir occasionally, check for tenderness of beans. Add the tomatoes, cilantro, and onions, and simmer for 5 minutes.
